  • Vegetable broth4 cups
  • Garlic4 cloves
  • Sweet potato2 pieces
  • Spices, cumin½ tsp
  • Spices, cinnamon1 pinch
  • Salt½ tsp
  • Onions1, diced
  • Spices, chili pepper flakes⅛ tsp
  • Cilantrooptional, garnish
  • Peanuts1 tbsp per bowl
  • Spices, curry powder2 tsp

Steps

  1. 1. Steam and saute the onions and garlic, adding stock as needed to prevent sticking. Meanwhile, bake the sweet potatoes in the microwave or the oven.
  2. 2. Add 4 cups of vegetable broth, sweet potatoes, and remaining ingredients (except for cilantro and peanuts), and bring to a boil, then reduce to a simmer and cover.
  3. 3. Simmer on low heat for 20 minutes, or until all of the ingredients are tender.
  4. 4. Turn off the heat and puree with a hand blender until smooth, adding more broth to achieve desired consistency.
  5. 5. Once the soup is pureed, bring it back to a simmer to warm it through.
  6. 6. Ladle into bowls and top each bowl with cilantro and chopped peanuts. Enjoy!
