Ingredients
- Vegetable broth4 cups
- Garlic4 cloves
- Sweet potato2 pieces
- Spices, cumin½ tsp
- Spices, cinnamon1 pinch
- Salt½ tsp
- Onions1, diced
- Spices, chili pepper flakes⅛ tsp
- Cilantrooptional, garnish
- Peanuts1 tbsp per bowl
- Spices, curry powder2 tsp

Steps
- 1. Steam and saute the onions and garlic, adding stock as needed to prevent sticking. Meanwhile, bake the sweet potatoes in the microwave or the oven.
- 2. Add 4 cups of vegetable broth, sweet potatoes, and remaining ingredients (except for cilantro and peanuts), and bring to a boil, then reduce to a simmer and cover.
- 3. Simmer on low heat for 20 minutes, or until all of the ingredients are tender.
- 4. Turn off the heat and puree with a hand blender until smooth, adding more broth to achieve desired consistency.
- 5. Once the soup is pureed, bring it back to a simmer to warm it through.
- 6. Ladle into bowls and top each bowl with cilantro and chopped peanuts. Enjoy!
