Treat your little one to the goodness of Toddler-Friendly Vegan French Toast Casserole. This homemade delight features soft bread soaked in a gentle mixture of plant-based milk, flaxseed, and a hint of cinnamon.
Ingredients
- Soy milk2 1/4 cup
- Flax seeds3 tbsp
- Spices, cinnamon1/4 tsp
- Vanilla extract1/2 tsp
- Brown sugar1 1/2 tsp
- Bread, whole wheat8 slices
- Apple1, diced
- Maple syrup3 tbsp

Steps
- 1. Add all ingredients from soy milk through to brown sugar to a high speed blender/food processor. Blend until smooth. Set aside for 15 minutes to allow the custard to thicken.
- 2. Preheat the oven to 350 degrees F / 180 C.
- 3. Spray a baking dish with olive oil.
- 4. Arrange the chopped bread in an even layer over the base of the baking dish.
- 5. Top with the diced apple.
- 6. Pour the prepared custard over the bread and apple, making sure all bread is well coated in custard.
- 7. Bake in the oven for 45-55 minutes. Remove and allow to sit for 20 minutes or chill in the fridge overnight before cutting into 8 servings.
- 8. Serve topped with a sprinkle of powdered sugar, fresh berries and a drizzle of maple syrup.
