Treat your little one to the goodness of Toddler-Friendly Vegan French Toast Casserole. This homemade delight features soft bread soaked in a gentle mixture of plant-based milk, flaxseed, and a hint of cinnamon.

Ingredients

  • Soy milk2 1/4 cup
  • Flax seeds3 tbsp
  • Spices, cinnamon1/4 tsp
  • Vanilla extract1/2 tsp
  • Brown sugar1 1/2 tsp
  • Bread, whole wheat8 slices
  • Apple1, diced
  • Maple syrup3 tbsp

Steps

  1. 1. Add all ingredients from soy milk through to brown sugar to a high speed blender/food processor. Blend until smooth. Set aside for 15 minutes to allow the custard to thicken.
  2. 2. Preheat the oven to 350 degrees F / 180 C.
  3. 3. Spray a baking dish with olive oil.
  4. 4. Arrange the chopped bread in an even layer over the base of the baking dish.
  5. 5. Top with the diced apple.
  6. 6. Pour the prepared custard over the bread and apple, making sure all bread is well coated in custard.
  7. 7. Bake in the oven for 45-55 minutes. Remove and allow to sit for 20 minutes or chill in the fridge overnight before cutting into 8 servings.
  8. 8. Serve topped with a sprinkle of powdered sugar, fresh berries and a drizzle of maple syrup.
