Ingredients

  • Spaghetti sauce / marinara1 cup
  • Spices, black pepper¼ tsp
  • Garlic5-8 cloves
  • Green summer squash (zucchini)3 pieces, cut into quarters and diced
  • Yellow summer squash (qucchini, zephyr, ball, etc)3 pieces
  • Spinach4 cups
  • Pasta1 cup
  • Spices, chili pepper flakes⅛ tsp
  • Salt¾ tsp
  • Spices, oregano1 tsp
  • Italian seasoning1 tbsp
  • Onions1 piece, diced
  • Red bell pepper3 pieces, diced
  • Vegan Parmesan8 tbsp

Steps

  1. 1. Heat 2 tsp olive oil in a large pan over medium heat. Add the onions, peppers and garlic, saute 5 minutes.
  2. 2. Add the zucchini, squash, baby spinach, Italian seasoning, Oregano, salt, pepper, and crushed red pepper, saute 10 minutes or until the veggies have cooked through but are still slightly crisp.
  3. 3. While the veggies are cooking, cook the pasta according to package directions.
  4. 4. Serve the pasta with sauce, veggies, and top with parmesan cheese.
