Ingredients
- Water5 cups
- Seaweed, dried3 cm
- Vegetable mix2 cups, (thinly sliced)
- Miso3 tsp
- Shallots2 pieces, (finely chopped)

Steps
- 1. Rinse and soak wakame for 10 minutes in one cup of water until softened . Then remove and chop into 2.5cm-5cm strips.
- 2. Place water and wakame in a soup pot and bring to a boil.
- 3. Add root vegetables first and simmer gently for 5 minutes or until tender. Next add leafy vegetables and simmer for 2-3 minutes.
- 4. Remove about 1/2 cup of liquid from pot and dissolve miso paste into it. Return it to the pot.
- 5. Reduce heat to very low; do not boil or simmer miso broth as this kills all the good bacteria present in the miso.
- 6. Allow soup to cook 2-3 minutes. Garnish with shallots and serve.
