Ingredients
- All-purpose flour1 1/4 cups
- Baking powder1 tsp
- Banana1/4 cup
- Vanilla extract1 tsp
- Oil1/4 cup
- Coconut sugar¼ cup
- Oat milk, unsweetened1 cup

Steps
- 1. Place the flour, baking powder and sugar into a mixing bowl and whisk until well combined.
- 2. In a separate bowl whisk together all remaining ingredients.
- 3. Pour the wet ingredients into the dry ingredients and whisk until well combined.
- 4. Set aside and allow the batter to rest for 10 minutes before using.
- 5. Lightly spray a skillet with spray oil and heat over medium heat.
- 6. Drop ¼ cup of batter into skillet and cook until bubbles begin to form, flip and continue to cook for a further 2-3 minutes or until lightly golden brown.
- 7. Repeat until all batter has been used
