Ingredients

  • All-purpose flour1 1/4 cups
  • Baking powder1 tsp
  • Banana1/4 cup
  • Vanilla extract1 tsp
  • Oil1/4 cup
  • Coconut sugar¼ cup
  • Oat milk, unsweetened1 cup

Steps

  1. 1. Place the flour, baking powder and sugar into a mixing bowl and whisk until well combined.
  2. 2. In a separate bowl whisk together all remaining ingredients.
  3. 3. Pour the wet ingredients into the dry ingredients and whisk until well combined.
  4. 4. Set aside and allow the batter to rest for 10 minutes before using.
  5. 5. Lightly spray a skillet with spray oil and heat over medium heat.
  6. 6. Drop ¼ cup of batter into skillet and cook until bubbles begin to form, flip and continue to cook for a further 2-3 minutes or until lightly golden brown.
  7. 7. Repeat until all batter has been used
