Ingredients

  • Potato1 small piece, peeled, chopped
  • Carrots1 small piece, peeled, chopped
  • Corn1 small piece, kernels removed, cob discarded
  • Sweet potato1 small piece, peeled, chopped

Steps

  1. 1. STOVE TOP OR OVEN: Combine vegetables in a pot of boiling water and simmer for 10-15 minutes or until tender and soft. Drain, reserving a little of the cooking liquid.
  2. 2. Blend or process vegetables with reserved liquid, until smooth and combined.
  3. 3. Use immediately or freeze in ice cube trays for later use.
  4. 4. MICROWAVE: Combine vegetables in a microwave-safe container, cover with a little cling wrap, leaving a corner uncovered for steam to escape. Cook on HIGH for around 5 minutes. Check if cooked through, stir and continue for another minute if still not soft and tender.
  5. 5. Blend or process vegetables until smooth and combined.
  6. 6. Use immediately or freeze in ice cube trays for later use.
