Little quiches are the ideal food for little hands to hold, making these mini quiches the perfect recipe to pack into school lunch boxes. Cook them the night before or make ahead and freeze. Pack 2-3 of them with some carrot sticks and cherry tomatoes for a wholesome lunch. Not just for lunch boxes, you can also serve these delicious quiches at your next picnic or as finger food for a casual party. Ingredients

  • Pastry, puff1 sheet
  • Green summer squash (zucchini)1/2, grated
  • Ham40 g
  • Cheese1/2 cup, grated
  • Egg3
  • Milk1/2 cup

Steps

  1. 1. Preheat oven to 210°C (190°C fan-forced). Grease 2 x 12 hole patty pans.
  2. 2. Using a 7cm round cutter, cut 12 circles from each sheet of pastry. Press rounds into the holes of prepared pans.
  3. 3. Spoon zucchini, ham and cheese evenly into each pastry case. Whisk eggs and milk in a jug. Season with salt and pepper. Pour evenly over the filling.
  4. 4. Bake for 10-12 minutes or until golden and puffed. Serve quiches warm or cold.
