Ingredients

  • Pasta1 cup
  • Black beans 1 can
  • Corn 1 can
  • Red bell pepper150 g
  • Cherry tomatoes10
  • Olive oildrizzle
  • Spices, garlic powderto taste

Steps

  1. 1. Boil & drain 1 cup legume pasta of your choice (I used @barillaus protein+ bowtie pasta)⁠
  2. 2. Mix in 1 can no/low sodium black beans, drained ⁠
  3. 3. Mix in 1 can no/low sodium yellow corn, drained⁠
  4. 4. Add chopped red and orange bell peppers⁠ ⁠
  5. 5. Add chopped grape tomatoes⁠
  6. 6. Drizzle with olive oil⁠
  7. 7. Add seasonings of your choice (I used pepper, garlic powder, a splash of lemon and a tiny bit of salt)⁠
  8. 8. Mix everything together, serve and enjoy!⁠
