Ingredients
- Onions1/2, diced
- Spinach1 cup
- Spices, garlic powder1/2 tablespoon
- Red bell pepper1, diced
- Tofu1 package, extra firm
- Mushrooms1 cup, diced
- Spices, cumin1 tablespoon
- Spices, turmeric1/2 tablespoon
- Spices, paprika1 teaspoon
- Spices, black pepper1 pinch
- Spices, chili powder1/4 teaspoon
- Spices, onion powder1 teaspoon

Steps
- 1. Remove the tofu from the package, and press out any extra liquid by using a tofu press, a clean towel, or your hands.
- 2. In a large bowl, break the tofu into crumbled pieces and add all of the spices, except chili powder.
- 3. In a large pan, heat a few tablespoons of water over medium heat. Add the onion and saute for 2 to 3 minutes, adding more water as needed to prevent sticking. Add the remaining vegetables and saute for 2 to 3 more minutes. Then, add the seasoned tofu mixture, and cook for a final 2 to 3 minutes.
- 4. Serve the tofu scramble with your favorite fixings. Add the chili powder as you wish.
