One-pot orzo pasta and cheatballs

Orzo pasta (also known as risoni) is a rice-shaped pasta that's suitable to be cooked absorption style, just like a risotto. This recipe uses sausages to make meatballs in speedy fashion which makes this recipe not only a time-saver, but also a great budget beater. Source: kidspot

Ingredients

  • Pork500 g
  • Olive oil2 tsp
  • Red bell pepper1 piece, finely diced
  • Orzo pasta (risoni)1 1/2 cups
  • Cherry tomatoes250 g
  • Green summer squash (zucchini)1 piece, diced
  • Parsley1/4 cup, chopped
  • Basil10 leaves, torn
  • Parmasan cheeseto serve
  • Chicken broth2 cups

Steps

  1. 1. To make the cheatballs, squeeze small portions of sausage mixture from the casings and roll into small balls (don’t be too concerned about how round they are). Discard the casings.
  2. 2. Heat the oil in a large heavy-based frying pan over medium-high heat. Add the balls and cook, stirring occasionally until starting to brown. Add the capsicum and cook, stirring until just tender.
  3. 3. Add orzo and cook, stirring for 1 to 2 minutes or until a light, nutty colour. Add tomatoes and stock. Season with salt and pepper. Reduce heat to low. Bring to a gentle simmer. Cover and simmer gently for 20 minutes.
  4. 4. Scatter the zucchini over the top of the mixture. Cover with lid and turn off the heat. Stand for 5 minutes, then stir in the zucchini, parsley and basil. Serve sprinkled with parmesan.
