A fast-food favourite but not as you know it! I recently discovered that just two ingredients – Greek yoghurt and self-raising flour – make the perfect pizza base. Ingredients
- Greek yogurt, plain125 g
- Basil2 tbs
- Cheddar cheese75 g
- Mozzarella cheese75 g
- All-purpose flour150 g
- Sun-dried tomatoes1 tsp
- Spices, thyme1 tsp
- Cherry tomatoes8 pcs

Steps
- 1. Preheat the oven to 220ºC (fan 200ºC/gas mark 7). Line two baking trays with baking parchment.
- 2. Place the flour and yoghurt into a bowl. Mix well and stir into a dough. Knead on a floured work surface until smooth. Divide the dough into four equal pieces on a floured surface. Roll it out to make four 12cm bases. Place on the baking trays.
- 3. Mix the passata, sundried tomato purée and basil together in a bowl. Spoon on top of the bases and spread out. Top with the sliced tomatoes, cheeses and thyme.
- 4. Bake for 15 minutes until golden on top and underneath. Cut into quarters and serve a slice as a snack. Allow the other slices to cool and freeze in a plastic box separated by greaseproof paper.
