- Lentils1/2 cup

- Olive oil1 tbsp

Steps
- 1. Rinse the lentils thoroughly under cold water. In a small saucepan, combine the lentils, diced tomato, and water.
- 2. Bring the mixture to a gentle simmer over medium heat. Reduce heat to low, cover the pan, and cook for about 20 minutes, or until the lentils are very soft and beginning to break down.
- 3. Remove from heat and let cool slightly.
- 4. Add the olive oil and blend the soup until smooth. You can use an immersion blender or transfer to a regular blender.
- 5. If the soup is too thick, add a little more water to reach the desired consistency.
