  • Lentils1/2 cup
  • Tomatoes1, ripe
  • Olive oil1 tbsp
  • Water1 cup
  • Water1 cup

Steps

  1. 1. Rinse the lentils thoroughly under cold water. In a small saucepan, combine the lentils, diced tomato, and water.
  2. 2. Bring the mixture to a gentle simmer over medium heat. Reduce heat to low, cover the pan, and cook for about 20 minutes, or until the lentils are very soft and beginning to break down.
  3. 3. Remove from heat and let cool slightly.
  4. 4. Add the olive oil and blend the soup until smooth. You can use an immersion blender or transfer to a regular blender.
  5. 5. If the soup is too thick, add a little more water to reach the desired consistency.
