Ingredients

5 servings
  • Couscous1/2 cup
  • Carrots1/4 cup, chopped or diced
  • Green summer squash (zucchini)1/4 cup, chopped or diced
  • Olive oil1 tbsp
  • Vegetable broth1/4 cup

Steps

  1. 01

Prepare the Couscous: In a small pot, bring 1/4 cup (60ml) of water or vegetable broth to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes to absorb the liquid, then fluff with a fork.

  2. 02

Cook the Veggies: In a small pan, heat 1 tablespoon (15ml) of olive oil over medium heat. Add the finely chopped carrots and zucchini. Cook for 4-5 minutes until the vegetables are soft.

  3. 03

Combine Couscous and Veggies: Once the couscous and vegetables are cooked, combine them in a bowl and stir well to mix.

  4. 04

Shape the Cups: Take a small spoonful of the couscous mixture and form it into small cups or patties. You can press them into muffin tin cups if you prefer, or simply mold them by hand.

  5. 05

Serve: Let the couscous cups cool to a safe temperature and serve in small portions. These cups are perfect for toddlers to pick up and enjoy with their hands.
