  • Olive oil1 tbsp

Steps

  1. 01

Cook the Quinoa: In a small pot, rinse 1 cup of quinoa under cold water. Add it to 2 cups (475ml) of water and bring to a boil. Reduce to a simmer, cover, and cook for 15 minutes or until water is absorbed. Let it cool slightly.

  4. 04

Assemble the Poke Bowl: In a small bowl, combine the cooked quinoa, diced cucumber, diced avocado, and steamed sweet potato cubes.

  5. 05

Add Olive Oil: Drizzle 1 tablespoon of olive oil over the mixture and gently stir to combine, ensuring the ingredients are coated.
