These pumpkin waffles will make the perfect fall breakfast for you and your babes! They are fluffy, nutritious and oh so delicious! They are low in added sugar and packed with vitamin A, folate, fiber, and so many beneficial vitamins and minerals!
Ingredients
- Whole wheat flour1 cup
- Baking powder1 Tbsp
- Soy milk 3/4 cup
- Vanilla extract1 tsp
- Coconut oil1 Tbsp
- Spices, pumpkin pie 1 Tbsp
- Pumpkin puree1/2 cup
- Flax seeds1 Tbsp
- Water2.5 Tbs
- Maple syrup1-2 Tbsp

Steps
- 1. First make your flax egg by combining the flaxseed and water in a small bowl and allow it to sit for about 10 minutes
- 2. In a separate bowl, mix together the dry ingredients making sure that everything is combined thoroughly
- 3. Then add in the wet ingredients including the flax egg
- 4. Prepare your waffle iron and spray it with oil of your choice
- 5. Pour in the batter and allow it to cook per the settings on your iron
- 6. Remove, let cool, serve, and enjoy!
