Ingredients
- Parsley1 small bunch
- Fresh mint1 small bunch
- Raisins1/2 cup
- Cucumber100 g
- Onions1/2 pc
- Cherry tomatoes8 oz
- Lemon juice2 Tbsp
- Olive oil2-3 Tbsp
- Salt1 g
- Spices, black pepper1 g
- Couscous8 oz

Steps
- 1. Sauté the onions in a shallow pan with oil
- 2. After 1-2 minutes add the dry couscous to the pan and toast it for about 3-5 minutes, stirring frequently, until it becomes a golden brown
- 3. Go on to prepare the couscous following the instructions on the box
- 4. While your couscous is cooking, chop your veggies and herbs
- 5. Once the couscous is done, fluff it with a fork and allow it to cool
- 6. Once cooled, mix in the veggies, herbs, and raisins until everything is well combined
- 7. Add in the olive oil, lemon juice, and salt & pepper to taste
- 8. Once the flavors make you smile then you'll know it's ready to serve and enjoy!
