Ingredients

  • Pecans2/3 cup
  • Oats2 cups
  • Spices, cinnamon2 tsp
  • Baking powder1 tsp
  • Salt3/4 tsp
  • Soy milk3/4 cup
  • Maple syrup1/3 cup
  • Flax seeds2 flax eggs
  • Vanilla extract2 tsp
  • Blueberries16 oz
  • Spices, ground nutmeg1/4 tsp

Steps

  1. 1. Preheat the oven to 375 and grease a 9" square baking dish⁠
  2. 2. In a medium bowl combine oats, pecans, cinnamon, nutmeg, baking powder, and salt⁠
  3. 3. In a separate bowl combine milk, maple syrup or honey, and flax egg
  4. 4. Set half of the blueberries aside
  5. 5. Mix the wet and dry ingredients, fold in half of the blueberries, and spread the mixture evenly in the baking dish
  6. 6. Scatter the remaining berries on top of the dish.⁠ Bake for 45 minutes, remove and let cool, then serve & enjoy!⁠
