- Mango 20 oz
- All-purpose flour1 cup
- Baking soda1 tsp
- Spices, cinnamon1/4 tsp
- Salt1/2 tsp
- Egg1 pc
- Coconut oil2 Tbsp
- Whole wheat flour1 cup
- Shredded coconut1/2 cup

Steps
- 1. Preheat your oven to 350ā
- 2. PurĆ©e the frozen mango using a blender or food processor (you may need to microwave the mango for a minute or so to make it soft prior to blending it), which should yield about 2 cups of purĆ©e and set asideā
- 3. In a large bowl whisk together the flour, baking soda, cinnamon, and saltā
- 4. In a separate bowl combine the mango purĆ©e and beaten eggā
- 5. Add the coconut oil to the dry mixture and stir then add in the wet ingredients and mix until everything is just combinedā
- 6. Pour the batter into a greased muffin tin and sprinkle the tops with shredded coconutā
- 7. Bake for 15-20 mins until the edges are golden brown and the tops of the muffins spring back when lightly touchedā
