Ingredients

  • Mango 20 oz
  • All-purpose flour1 cup
  • Baking soda1 tsp
  • Spices, cinnamon1/4 tsp
  • Salt1/2 tsp
  • Egg1 pc
  • Coconut oil2 Tbsp
  • Whole wheat flour1 cup
  • Shredded coconut1/2 cup

Steps

  1. 1. Preheat your oven to 350ā 
  2. 2. PurĆ©e the frozen mango using a blender or food processor (you may need to microwave the mango for a minute or so to make it soft prior to blending it), which should yield about 2 cups of purĆ©e and set asideā 
  3. 3. In a large bowl whisk together the flour, baking soda, cinnamon, and saltā 
  4. 4. In a separate bowl combine the mango purĆ©e and beaten eggā 
  5. 5. Add the coconut oil to the dry mixture and stir then add in the wet ingredients and mix until everything is just combinedā 
  6. 6. Pour the batter into a greased muffin tin and sprinkle the tops with shredded coconutā 
  7. 7. Bake for 15-20 mins until the edges are golden brown and the tops of the muffins spring back when lightly touchedā 
  8. 8. Remove from the oven, let cool, serve, and enjoy!ā
