Ingredients
- Cauliflower1 head
- Honey1 Tbsp
- Lime1/2
- Spices, paprika3/4 tsp
- Spices, cumin1/2 tsp
- Salt1/2 tsp
- Tortilla100 g
- Black beans1 can
- Avocado1/2
- Greek yogurt, plain1/2 cup
- Garlic1 Tbsp
- Lime1/2
- Salt1 g
- Spices, black pepper1 g
- Adobo seasoning2 Tbsp

Steps
- 1. Preheat oven to 425 F
- 2. Combine olive oil, adobo, honey, lime, paprika, cumin, and salt in a large bowl and stir
- 3. Add in cauliflower florets and toss until evenly coated with the mixture
- 4. Spread the florets across a lined baking sheet and roast for 35-40 mins, flipping them half way through
- 5. As the cauliflower cooks, combine yogurt, avocado, lime juice, garlic, salt & pepper in a blender and blend until smooth
- 6. Once the cauliflower is done, spread about 2 Tbsps refried black beans across a corn tortilla, place the cauliflower in a row in the middle and roll
- 7. Then in a pan with oil lightly fry the taquitos on both sides. Once done serve with the crema and enjoy!
