Ingredients
- Oats1/2 cup
- All-purpose flour1/4 cup
- Baking powder 1 tsp
- Blueberries 1 small handful
- Peach1 piece
- Flax seeds2 eggs
- Coconut oil2 Tbsp
- Spices, cinnamon1 tsp
- Vanilla extract1 tsp
- Soy milk 2-4 Tbsp
- Maple syrup 2 Tbsp

Steps
- 1. Preheat oven to 350 and lightly spray your loaf pan with oil Mix together the flour, baking powder, oats, and cinnamon until well combined Add the egg, vanilla, oil, and maple syrup to the mixture
- 2. Cut the peach in half. Chop one half of the peach into bitesized pieces. Cut the other half into thin segments lengthwise Stir the chopped peaches and blueberries into the batter
- 3. Add 2 Tbsp of milk until well combined. Add additional milk if necessary. The batter should be thick and goopy but easy to spoon and manage Pour the batter into the loaf pan and top with the sliced peaches
- 4. Cover and bake for 16 mins. Remove the cover and bake for another 10 mins or until the corners start to brown slightly Once done let cool, cut, serve & enjoy!
