Ingredients

  • Oats1/2 cup
  • All-purpose flour1/4 cup
  • Baking powder 1 tsp
  • Blueberries 1 small handful
  • Peach1 piece
  • Flax seeds2 eggs
  • Coconut oil2 Tbsp
  • Spices, cinnamon1 tsp
  • Vanilla extract1 tsp
  • Soy milk 2-4 Tbsp
  • Maple syrup 2 Tbsp

Steps

  1. 1. Preheat oven to 350 and lightly spray your loaf pan with oil Mix together the flour, baking powder, oats, and cinnamon until well combined⁠ Add the egg, vanilla, oil, and maple syrup to the mixture⁠
  2. 2. Cut the peach in half. Chop one half of the peach into bitesized pieces. Cut the other half into thin segments lengthwise⁠ Stir the chopped peaches and blueberries into the batter⁠
  3. 3. Add 2 Tbsp of milk until well combined. Add additional milk if necessary. The batter should be thick and goopy but easy to spoon and manage⁠ Pour the batter into the loaf pan and top with the sliced peaches⁠
  4. 4. Cover and bake for 16 mins. Remove the cover and bake for another 10 mins or until the corners start to brown slightly Once done let cool, cut, serve & enjoy!⁠
