Introduce your little one to the savory goodness of Toddler-Friendly Vegan Mushroom Pasta. This homemade dish features tender pasta tossed in a flavorful mushroom sauce, crafted without any animal products.
Ingredients
- Olive oil1 tbsp
- Butter2 tbsp
- Onions1/2, diced
- Garlic3 cloves, crushed
- Mushrooms7 oz, sliced
- All-purpose flour2 1/2 tbsp
- Soy milk1 1/2 cups
- Parmasan cheese1/2 cup
- Pasta4 cups

Steps
- 1. Prepare pasta according to package directions.
- 2. Melt the olive oil and vegan butter in a large skillet, add the onion and sauté until translucent.
- 2. Serve immediately, topped with grated vegan cheese and chopped parsley.
- 3. Add the garlic and mushrooms, continue to sauté until the mushrooms are cooked through.
- 4. Stir through the flour, reduce heat and cook for 2 minutes, continuing to stir.
- 5. Pour half of the soy milk in, stirring continuously to incorporate well.
- 6. Add remaining soy milk, increase heat and stir to combine.
- 7. Bring to a boil, reduce heat and continue to stir until the sauce thickens.
- 8. Mix through the vegan parmesan cheese reserving ¼ to sprinkle on top when serving.
- 9. Season with salt and pepper to taste.
- 10. Add the cooked pasta to the sauce and stir though.
