Ingredients

  • Red lentil pasta8 oz
  • Spaghetti sauce / marinara25 oz
  • Spinach6 oz
  • Red bell pepper2 pieces, diced
  • Onions¼ piece, diced
  • Green summer squash (zucchini)1 piece, diced
  • Garlic5 cloves, minced
  • Italian seasoning2-3 tsp
  • Salt½ tsp
  • Spices, chili pepper flakes⅛ tsp
  • Parmasan cheese8 tbsp

Steps

  1. 1. Cook the pasta according to package directions.
  2. 2. In a medium sized pot, saute the peppers, onion, zucchini, spinach, garlic and spices (italian seasoning, salt, crushed red pepper) for about 5-10 minutes until soft.
  3. 3. Combine the cooked veggie mixture with 1 jar of Marinara Sauce in a blender. Blend until smooth. (Alternatively you can add the red sauce to the pot, and use an immersion blender to blend it together).
  4. 4. Combine the cooked pasta with the superfood sauce mixture. Top with parmesan cheese and serve.
