This slow cooked roast beef is so juicy and tender it may just fall apart when you're slicing it! We've cooked it in an oven bag for ease and it also helps with the washing up. The delicious lemon, herb and garlic marinade also works well with chicken and lamb. Love a bit of heat? Why not add some dried chilli flakes or chopped fresh chilli to the marinade to add that extra bit of kick to your dinner. Source: kidspot

Ingredients

  • Beef1.2 kg
  • Olive oil2 tbs
  • LemonJuice of 2 pieces
  • Garlic1 clove, crushed
  • Spices, oregano1 tbs

Steps

  1. 1. Preheat the oven to 140°C fan forced, or 160°C for a conventional oven.
  2. 2. Mix the olive oil, oregano, lemon juice and garlic in a bowl.
  3. 3. Place the beef in an oven bag and pour the mixture over the top.
  4. 4. Seal the bag and roast in an oven tray for 2 hours.
  5. 5. When done, carefully hold the bag over a saucepan and snip the corner, letting all the juices pour into the pan. Place over medium-high heat. Reduce liquid for 5 minutes and pour over the carved roast meat as a sauce.
