This chicken fried rice is a great quick kids' dinner when you want to use up leftover veggies in the fridge and have some BBQ chicken to hand too! Some quick chopping action and frying pan is all that's needed to get this tasty meal on the table in minutes! Source: kidspot

Ingredients

  • Oil2 tsp
  • Chicken300 g
  • Onions1 piece
  • Garlic1 crushed clove
  • Rice2 cups, cooked, drained & chilled
  • Red bell pepper1 piece, diced
  • Green peas1 cup
  • Soy sauce2 tbs
  • Green onions2 pieces, sliced diagonally
  • Chicken broth powder4 tsps

Steps

  1. 1. Heat oil in a large frying pan.
  2. 2. Add the chicken, onion garlic. Stir fry over a high heat until golden brown.
  3. 3. Add the rice, chicken stock powder, capsicum and peas.
  4. 4. Stir fry for 5-8 minutes.
  5. 5. Stir in the soy sauce and spring onions, just before serving.
