Ingredients

  • Oats135 g
  • Vanilla extract1 tsp
  • Date400 g

Steps

  1. 1. Soak the dates in boiling water for at least 30 minutes, then drain.
  2. 2. Toast buckinis in a dry pan.
  3. 3. Place the soaked dates, oats, coconut, vanilla and coconut cream in a food processor and blitz until well combined.
  4. 4. Roll tablespoons of the mixture into balls and roll in the toasted buckinis. Store in an airtight container in the fridge or freezer.
