Ingredients

  • Fish, salmon1 fillet
  • Egg3 eggs
  • Milk2 tablespoons milk
  • Salt1 teaspoon
  • Coconut oil2 tablespoons

Steps

  1. 1. n a medium sized bowl, combine the breadcrumbs, almond meal and a sprinkle of the salt and mix together.
  2. 2. In a separate bowl place the arrowroot powder or organic corn starch.
  3. 3. In a shallow bowl, combine the milk and egg and whisk together using a fork.
  4. 4. Place the fish nuggets on a large plate and sprinkle with salt.
  5. 5. Dip each chunk separately into the arrowroot powder, then into the egg mix and finally into the breadcrumbs. Press down firmly to ensure that each nugget has a thick coating of the breadcrumb mix.
  6. 6. Coat a large frypan with 1-2 tbsp coconut oil and set over medium heat.
  7. 7. Place the nuggets (as many as you can fit) into a single layer. Make sure that the nuggets are not touching each other and that there is enough room to turn them over.
  8. 8. Cook for approx 3-4 min on each side - or until golden brow
  9. 9. Season with extra salt if necessary.
