Prepare a classic and kid-friendly dish for your little one with Fish Fingers. This toddler-friendly meal involves coating fish fillets in a light batter or breadcrumbs and baking or pan-frying until golden and crispy.
Ingredients
- Fish, salmon1 fillet
- Egg3 eggs
- Milk2 tablespoons milk
- Salt1 teaspoon
- Coconut oil2 tablespoons

Steps
- 1. n a medium sized bowl, combine the breadcrumbs, almond meal and a sprinkle of the salt and mix together.
- 2. In a separate bowl place the arrowroot powder or organic corn starch.
- 3. In a shallow bowl, combine the milk and egg and whisk together using a fork.
- 4. Place the fish nuggets on a large plate and sprinkle with salt.
- 5. Dip each chunk separately into the arrowroot powder, then into the egg mix and finally into the breadcrumbs. Press down firmly to ensure that each nugget has a thick coating of the breadcrumb mix.
- 6. Coat a large frypan with 1-2 tbsp coconut oil and set over medium heat.
- 7. Place the nuggets (as many as you can fit) into a single layer. Make sure that the nuggets are not touching each other and that there is enough room to turn them over.
- 8. Cook for approx 3-4 min on each side - or until golden brow
- 9. Season with extra salt if necessary.
