Ingredients
- Apricot2 pieces
- Chicken thigh1 piece, thigh part, trimmed, finely chopped
- Olive oil1 tbs
- Water1 cup
- Sweet potato1 cup, chopped

Steps
- 1. If using fresh apricots, wash and half them and discard stones. Cut into quarters (see recipe notes - Dried apricots don't need any preparation).
- 2. Heat oil in a medium saucepan over medium-high heat and add chicken. Cook for 5 minutes or until browned.
- 3. Add the water, sweet potato and apricots and bring to the boil. Reduce heat and simmer for 15 minutes or until sweet potato and apricot are soft and tender (there should be a bit of water left).
- 4. Blend or process until smooth and combined.
- 5. Use immediately or freeze in ice cube trays for later use.
