I’ve given this traditional sweet treat a nutritious makeover by using grated carrot and sweet potato, but little ones will still lap them up! Source: kidspot & Annabel Karmel

Ingredients

  • Carrots125g, peeled and grated
  • Sweet potato175g, peeled and grated
  • Parmasan cheese100g, grated
  • Green onions3 pcs
  • Spices, thyme1 tsp
  • Egg3
  • All-purpose flour70g
  • Oilfor greasing

Steps

  1. 1. Preheat a waffle maker.
  2. 2. Put all the ingredients into a mixing bowl and stir well, to combine.
  3. 3. Brush the waffle maker with sunflower oil. Put one-sixth of the mixture into the centre of the waffle plate. Spread out a little, pushing the mixture to the edges.
  4. 4. Close the lid and leave for 5 minutes before lifting. The waffle should be golden and cooked through. Repeat to make six waffles in total.
