A spicy and savory one-pot dish that the whole family will enjoy. Add some cayenne pepper for an extra kick.

Ingredients

  • Spinach3 cups
  • Onions1/3 tablespoon
  • Ginger root, pickled1/2 teaspoon
  • Peanuts1/4 cup
  • Sweet potato2 cups
  • Brown rice1 cup
  • Red bell pepper2 tablespoons
  • Tomatoes1 can of 14.50 ounces
  • Milk1 1/4 cups
  • Spices, garlic powder1/2 teaspoon
  • Salt1/2 teaspoon
  • Peanut butter8 tablespoons
  • Chicken broth2 cups

Steps

  1. 1. Wash hands with soap and water.
  2. 2. Combine first 9 ingredients in a soup pot. Bring to boil, then turn down to medium low, cover and simmer for 10 minutes.
  3. 3. Stir in peanut butter and milk. Return to gentle simmer and cook uncovered for 5 minutes.
  4. 4. Stir in spinach and cook until wilted, 2 to 3 minutes. Remove from heat.
  5. 5. Ladle stew into bowls and top with peanuts and green onion, if desired.
