These baked potato taquitos are so simple to make, delicious, and will easily become a favorite that the whole fam can enjoy! Potatoes tend to get a bad rap, but they are extremely nutritious and can be an excellent addition to a balanced diet for littles. Potatoes are rich in vitamin C which helps boost immunity, potassium which is important for heart health, and when cooked and cooled they contain resistant starch which is beneficial for gut health because it acts as a prebiotic and helps feed the good bacteria in your gut. Ingredients
- Potato350 g
- Scallion30 g
- Soy milk 1/2 cup
- Olive oil 2 Tbsp
- Salt1/2 tsp
- Garlic1 Tbsp
- Spices, black pepper1 g

Steps
- 1. Roughly chop the potatoes and boil them over medium-high heat until they are soft and easily pierced with a fork (about 15-20 mins)
- 2. While the potatoes are cooking chop the scallions thinly
- 3. Add the scallions to a pan and sautée them lightly (about 2-5 mins) with the garlic and touch of olive oil and set them aside
- 4. Once the potatoes have cooked, drain them and let them cool for about 5-10 mins
- 5. Lightly mash the potatoes and mix in the milk, olive oil, salt, scallion & garlic mixture, and pepper to taste
- 6. Mash until everything is well combined (you can also use a hand mixer if you have one for more ease)
- 7. Once mashed, set the potatoes aside and warm 3 tortillas in a paper towel in the microwave for about 20 secs to make them more pliable
- 8. Place a spoon full of potatoes across the center of each tortilla and roll
- 9. Place the rolled taquitos seam side down on a baking sheet, dust the tops of the taquitos lightly with oil or spray and bake at 400 for about 15-20 mins
- 10. Remove from the oven, let cool, top with you favorite toppings (salsa, cheese, sour cream, or guac) and enjoy!
