Easy Peasy Veggie Fried Rice FTW!! Save this meal idea for later because it’s delicious, nutritious, comes together in about 10 mins, and works as a balanced meal all on its own! ⁠ Source: Instagram/itsthecardamom

Ingredients

  • Vegetable mix1 cup
  • Rice1 cup
  • Egg100 g
  • Soy sauce5 g
  • Carrots30 g

Steps

  1. 1. Scramble the eggs in a lightly oiled pan over medium heat (can season with salt and pepper if you choose)⁠
  2. 2. Set the egg aside once done and add the veggies into the pan⁠
  3. 3. Sauté the veggies until tender and season to your taste (a combo of garlic powder, chili powder, and onion powder never fails me )⁠
  4. 4. Microwave the rice and add to the pan along with the eggs that were previously set aside⁠
  5. 5. Sprinkle with about 1 tsp of coconut aminos and mix thoroughly (may omit this step if you’re preparing this for younger babes <2 yrs when avoiding salt is ideal)⁠
  6. 6. Remove from heat, top with shredded carrots, serve and enjoy! ⁠
