These cheesy cauliflower bites make the perfect accompaniment to a roast dinner or saucy casserole - or even as a lunch box snack. (Good luck trying to stop the kids from eating them straight out of the oven!) Source: kidspot

Ingredients

  • Cauliflower300 g
  • Potato200 g
  • Egg1
  • Garlic1 clove
  • Parmasan cheese1/2 cup
  • Saltpinch

Steps

  1. 1. Preheat oven to 200°C and line a tray with baking paper.
  2. 2. Roughly chop potato and cauliflower and place in a steamer basket to steam for 2-3 minutes until just tender, but not falling apart.
  3. 3. Remove from steamer basket and place in a bowl to cool slightly.
  4. 4. Mash the potato and cauliflower together with a fork.
  5. 5. Add egg, cheese and salt to the mash and mix.
  6. 6. Take 1 tbsp of the mixture and roll into a ball, then place on baking sheet. Repeat with remaining mixture.
  7. 7. Bake for 10-12 minutes, turning them over half way, until golden.
  8. 8. Cool before eating,
