Ingredients

  • Pumpkin seeds1/4 cup
  • Chocolate chips, dark1/4 cup
  • Date12 pieces, 60 – 70g
  • All-purpose flour1 Tbsp
  • Maple syrup1 Tbsp
  • Whey protein powder1/2 cup
  • Spices, cinnamon1/2 tsp
  • Spices, allspice1/4 tsp
  • Spices, ground nutmeg1/4 tsp
  • Pumpkin puree1/4 cup
  • Shredded coconut1/2 cup

Steps

  1. 1. Place pumpkin seeds and cocoa nibs in a food processor and pulse until they resemble large crumbs; remove and set aside.
  2. 2. Place dates in the food processor and process until broken into small crumbles.
  3. 3. Add remaining ingredients, including the reserved pumpkin seed mixture, to the food processor and process until a dough forms, about 1-2 minutes.
  4. 4. Portion 1 tablespoon per serving and shape each into a ball. If desired, roll each ball in coconut. Store covered and chilled.
