Ingredients

  • Tomato sauce1 can (28 ounces)
  • Coconut milk1 can (14 ounces)
  • Sweet potato1 medium, diced
  • Onions1 small
  • Olive oil1 tbsp
  • Salt½ tsp

Steps

  1. 1. 1. Heat the olive oil in a medium pot over medium heat. Add the onion, sweet potato, and garlic. Sprinkle with salt and stir to coat. Cook until vegetables just start to soften, about 10 minutes.
  2. 2. 2. Add the tomatoes and stir. Raise the heat to bring to a simmer, then reduce back to medium heat and simmer for 10-15 more minutes, or until the sweet potatoes are soft when poked with a fork.
