- Tomato sauce1 can (28 ounces)
- Coconut milk1 can (14 ounces)
- Sweet potato1 medium, diced
- Onions1 small
- Olive oil1 tbsp
- Salt½ tsp

Steps
- 1. 1. Heat the olive oil in a medium pot over medium heat. Add the onion, sweet potato, and garlic. Sprinkle with salt and stir to coat. Cook until vegetables just start to soften, about 10 minutes.
- 2. 2. Add the tomatoes and stir. Raise the heat to bring to a simmer, then reduce back to medium heat and simmer for 10-15 more minutes, or until the sweet potatoes are soft when poked with a fork.
