Ingredients
- Chicken thigh1 lb
- Egg1 piece
- Olive oil2 tbsp
- Carrots1 piece
- Parmasan cheese1/2 cup
- Breadcrumbs, panko1/2 cup
- Salt1/2 tsp
- Spices, garlic powder1/2 tsp
- Spices, onion powder1/2 tsp

Steps
- 1. Preheat oven to 400F and prepare a medium baking sheet (grease with olive oil or use parchment paper).
- 2. Place the chicken thighs, grated carrots and all the other ingredients in a food processor and blend until forms a paste.
- 3. Mold the meatballs using a small scoop (about 1 tbsp), or a spoon.
- 4. Bake for 25 minutes until golden and fully cooked (internal temperature 165°F)
